Celebrate national ice cream month with our unforgettable Chocolate Chocolate Sugar Cookie Ice Cream Sandwich recipe. The beauty of these homemade ice cream sandies is that you can make them any way you like! Pair them with your favorite ice cream and roll the edges in colorful sprinkles, chopped walnuts, mini chocolate chips, flaked coconut, marshmallows, crushed Oreos…whatever you have on hand will work just fine. Oh, and the kids will gladly help.
Chocolate Chocolate Sugar Cookies
1 ¼ cups all-purpose flour
½ cup unsweetened Dutch process cocoa
1 teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
1 ½ cups sugar
½ cup plus 2 tablespoons (1 ¼ sticks) unsalted butter at room-temperature
1 large egg
1 cup chocolate chips
1 pint ice cream (any flavor)
Preheat oven to 375°F.
Mix the flour, cocoa, baking soda, baking powder, salt, and sugar in a large bowl. Blend with an electric mixer until ingredients are well incorporated. While on low speed, add butter and then the egg. Continue mixing until dough comes together in one nice ball.
Place rounded teaspoons of batter (or 1/8 cup scoop for larger cookies) approximately 2 inches apart on a baking sheet lined with parchment paper. Slightly flatten the tops of the dough using the top of a spatula. Bake for 9 minutes, rotating once for even baking. Cool.
For The Ice Cream Sandwiches:
Prepare and bake cookies as directed; cool completely. Spread desired amount of softened ice cream on bottom halves of cookies. Lightly press ice cream down with a spatula before topping with remaining cookie halves. Roll sandwiches in desired trimmings. Place sandwiches on a baking sheet, cover with plastic wrap and freeze until firm, at least 1 hour. You can freeze up to 2 days.
